Spicy Smoked Chicken Sandwich

If the sound crispy chicken makes when you bite into it turns your mouth into a waterfall... Prepare to fall in love with this spicy smoked chicken sandwich recipe!

You Will Need

  • 6 boneless skinless chicken thighs
  • The Best Garlic Jalapeno Rub
  • 1 ½ sticks of butter
  • 2 bottles Buffalo HOT Wing Sauce
  • SPG Rub
  • Hamburger buns
  • 6 slices of a spicy Cheese
    • Try something other than the typical Pepper Jack!
  • 1 package Ranch Dressing mix (or one bottle of dressing)
  • 1 cup Milk
  • 1 ½ Cup Mayonnaise
  • Optional toppings: Pickles, Romaine lettuce, Tomato

  • Traeger & pellets
  • Smoker cooling rack

The Prep

To make a good smoked chicken sandwich, you first and foremost need some quality ingredients. This does not mean they have to be expensive - there are things you can do that will make a difference in the end product, without blowing out your budget. Source your chicken thighs locally if possible, and pick a spicy cheese other than the typical pepper Jack - an experiment that's bound to pay off!

Now having done that, let's make ourselves some spicy smoked chicken sandwiches! Preheat the Traeger (or your smoker of choice) to 350ºF (177ºC). While that's coming up to temp, trim any excess fat from the chicken thighs and cover all sides well with Garlic Jalapeno rub. They are good to go!

The Cook

Once the chicken thighs and the pit are both ready, place the chicken on the cooling rack in the center of the Traeger for indirect heat.

In the meantime, grab a small pan, add the Buffalo HOT Wing Sauce and season with SPG (to taste). Next, place the pan on the Traeger beside the chicken and stir occasionally every 10-15 minutes.

Cook chicken for 30 minutes, dunk it in your sauce mixture, coating both sides, then return it to the rack.

While the chicken cooks, make the ranch dressing according to the instructions on the package, adding each ingredient to a Mason jar (or mixing bowl, up to you!). For extra heat, add in Wing Sauce and Garlic Jalapeno to taste.

Cook the spicy chicken until internal temperature reaches 170°F (77ºC). Then coat them in the sauce one more time, before returning them to the cooling rack for the sauce to set, for about 8-10 minutes.   

The Payoff

Almost there! The chicken thighs should be ready by now. Simply top each one with a slice of cheese, and allow it to melt.

Toast the hamburger buns while cheese is melting. Optionally, you can melt ½ stick of butter in a small bowl, and brush each hamburger bun before toasting. 

And once everything is ready, the only thing that's left is to assemble your sandwich! Drizzle with Spicy Ranch and any other toppings you like, and enjoy!
