Apple Pie Filling in a Meatloaf - Smoked Apple Pie Meatloaf

You Will Need

  • 2 lbs 80/20 Ground Beef
  • 1 lb Hot Breakfast Sausage
  • ½ lb thin-cut Fried Bacon (Cut into small pieces)
  • 3 Eggs
  • 1 Large Sautéed Yellow Onion (finely diced)
  • 2 Cups Italian Bread Crumbs
  • ½ Cup Brown Sugar
  • 3 Tbsp Dirty Bird HOT
  • 3 Tbsp Yellow Mustard
  • 2 Tbsp Worcestershire Sauce
  • 1x 16 oz can of apple pie filling
  • ½ cup Kosmos Q Sweet Apple Chipotle BBQ Sauce

The Prep

Start by preparing the key components of your meatloaf. Pour the canned apple pie filling into a food processor and blend it until smooth. Set it aside. Next, cut the bacon into small pieces, about 1/8-inch in size, and fry them until crispy. Once done, set it aside to cool, but don't discard the bacon grease! Dice the yellow onion finely and sauté it in the reserved bacon fat until it's soft and slightly browned. Once done, let them cool slightly. 

Now, in a large mixing bowl, combine the ground beef, sausage, bacon, and sautéed onions. Add the remaining ingredients, including the blended apple pie filling, and mix everything together by hand. Be careful not to overmix, as this can make the meatloaf tough.

Line a loaf pan with plastic wrap, press the meat mixture into it, and place it in the freezer overnight. This helps the loaf hold its shape when you remove it for smoking.

The Cook

After the meatloaf has had time to firm up in the freezer, it’s time to get it ready for the smoker. Remove the loaf from the pan and discard the plastic wrap. Place the meatloaf on a wire mesh rack to ensure even cooking. Before smoking, give it a light coat of yellow mustard and then rub it down with Kosmos Q Dirty Bird Hot. This will help create a flavorful crust on the outside, adding a bit of heat that complements the sweetness of the apple pie filling.

Preheat your smoker to a temperature between 275°F to 300°F (135°C to 149°C). If you are using wood for smoke, use pecan, which pairs beautifully with the apple flavors in the meatloaf.

The Payoff

Smoke the meatloaf until it reaches an internal temperature of 165°F (74°C). This usually takes a couple of hours, but keep an eye on it to avoid overcooking. Once it hits the right temperature, remove it from the smoker and brush on the Kosmos Q Sweet Apple Chipotle BBQ Sauce. This final glaze will give your meatloaf a glossy finish and an extra layer of flavor.
