Billionaire's Bacon | Pig Candy Recipe

This is how you add even MORE flavor to your bacon, with this maple sugar pig candy recipe. The recipe is super simple, with a crazy kick - what is it, you ask? Stick around and you will find out!

    What is Pig Candy?

    Who doesn’t love bacon? It’s delicious on its own, and delicious with other stuff. You can have it for breakfast, lunch and dinner. Crunchy or chewy. It’s the “duct tape of food”. What could you possibly do to improve it?

    Well, not much - until pig candy came around. This is how to turn bacon into an amazing sweet snack, so you can keep enjoying it all day long if you want to!

    The Cook

    Since this one’s going on the smoker, the first thing you want to do is fire that baby up and get the temperature to stabilize somewhere around 325ºF (163ºC). In the meantime you can prepare the bacon, so once the pit is hot, you can start cooking right away!

    For the purposes of this, a disposable BBQ tray will come in handy, to transport the bacon to and from the cooker. Spread the individual bacon slices on the rack, and season it with a layer of Killer Bee Honey rub, followed by some maple brown sugar. Flip the bacon over and repeat.

    Transfer the tray on to the cooker, close the lid, and let the magic happen! Cooking at 325ºF (163ºC), it should take about 10 minutes before you have to flip the pig candy over. Then let it cook for another 10-15 minutes, until you get the tenderness/crispness you like - we cook ours to the consistency of tender beef jerky.

    The Payoff

    The last part of this smoked pig candy recipe might also be the most important part. Once the bacon is done cooking, let it rest for 5 minutes. Then, and this is vital: transfer the pig candy to a sheet of parchment paper, to prevent any sticking from happening. Cool your billionaire’s bacon in the fridge for 30 minutes, and it’s ready to eat!
