Butter Burgers

Sometimes, the simplest burgers are the best. These butter burgers are rich, juicy, and packed with flavor, making them a perfect go-to recipe for your next cookout.

You Will Need

  • 1 ⅓ lb (600g) 80/20 ground chuck
  • 5 tbsp (70g) butter, frozen and grated
  • Kosmos Q Cow Cover rub 
  • Kosmos Q Double Pepper Cow Cover
  • 4 slices of Pepper Jack cheese
  • 4 buttered and toasted potato hamburger buns
  • Kosmo’s Q Spicy Garlic Pickles
  • Heinz yellow mustard
  • Potato Buns

The Prep

Step one: throw the butter in the freezer at least a couple of hours before you start cooking. When you're about to get your hands dirty, start by grating the frozen butter—this step is key to getting that buttery richness evenly distributed throughout your burger patties. Mix the ground chuck, grated butter, and 1 tablespoon of Cow Cover rub thoroughly by hand. You want the butter to be well incorporated but not melting from the heat of your hands.

Divide the meat mixture into four equal portions and shape them into patties, about ⅓ lb (150g) each. Make sure they’re slightly larger than your burger buns, as they’ll shrink while cooking. Season both sides of the patties with the Double Pepper Cow Cover rub to taste. Now, you’re ready to fire up the grill!

The Cook

Preheat your grill or smoker to medium-high heat, around 375°F (190°C). A griddle or pellet grill works best for these burgers, as they allow the butter to infuse the meat without causing flare-ups. Lightly butter your cooking surface to enhance flavor and prevent sticking.

Place the patties onto the griddle and let them cook for about 3 minutes. Flip them carefully and continue cooking until they reach your desired internal temperature. For a perfect medium-rare burger, aim for an internal temp of 130°F (54°C). Add the cheese during the last minute to let it melt beautifully over the patty.

The Payoff

Once the patties are cooked and the cheese is melted, remove them from the heat and let them rest for a minute. Meanwhile, butter the potato buns and give them a toast to golden perfection, adding crunch to every bite.

Now comes the assembly—place each patty on a toasted bun, top with a few Kosmo’s Q Spicy Garlic Pickles, and slather on a generous amount of yellow mustard. That’s it! No fuss, just a straightforward, buttery, flavor-packed burger.
