Juicy, cheese stuffed bratwursts wrapped in crispy bacon - 20 minutes start to finish. Need ideas for a quick and fun recipe, you're in the right place.

Step one is stuffing the brats. To do this, first cut long strips of cheese out of the block of Gouda. Then, cut each brat along its length, but not all the way through, so they can open up without splitting. Place one strip of cheese in each brat, then wrap in bacon - 1 or 2 strips of bacon per brat will do. Secure with toothpicks or with a grill pin.
Once you've got the cheese stuffed bratwursts ready, the only thing that's left to do is season them with Sweet Honey Pecan rub. Cover on all sides, and cover until ready to cook.
Time to fire up the cooker! Set it up for cooking up over direct heat at a medium-high temperature 300-350ºF (150-175ºC). Let the grill grates get hot first, then throw on the stuffed brats!
Cook the brats until the bacon becomes crispy. By then the cheese should be melting and your mouth should be watering - if not, you're doing it wrong!
Once the brats are good to go, pull them off the heat. Give the brat buns a quick toast as well, before assembling with some shredded lettuce and chopped Roma tomatoes.
