Keeping up with the crispy chicken wing streak, these buffalo BBQ wings are here to up the stakes even further... Another great and surprisingly simple recipe by our friend Rick Schultz of Cocktails and Q.
Let's jump right in! With all of the ingredients in reach, arrange the wings on a rack or tray for easy transport. Season liberally with the Beer Can Chicken rub, making sure to get full coverage on all sides. Then cover with saran wrap, and place in the fridge for 3-4 hours prior to cooking.
When you're ready to go, get the wings out of the fridge. It's time to get them breaded! For the breading, mix the potato starch and baking powder in a dry bowl. Then add the chicken to that bowl and toss to coat.
Pat off excess breading and fry at 350ºF (177ºC) for 10-12 minutes, or until the chicken hits an internal temperature of 175-180ºF (80-82ºC).
Onto the final step: Place the cooked chicken on a cookie rack to let the oil drain. Then place it in a large bowl, and toss with Honey BBQ wing dust until well covered. Finally, add the Buffalo Hot Wing Sauce to the bowl and toss to coat as well.
Serve with some ranch or Blue Cheese dressing (or anything else you like!). We hope you enjoy!
