Maple Syrup Bacon Pancakes

Bring your BBQ to a sweet end with some pancakes on the grill - with maple syrup & smoked bacon to seal the deal. Sent to us by Aaron of Not So Gross Grilling, thank you so much Aaron!

You Will Need

  • 2 Cups ground oats
  • 3 eggs
  • 1 ripe banana
  • 2 Tbsp real maple syrup
  • 1/2 Cup almond milk
  • 2 tsp baking powder
  • 1/2 tsp salt
  • Bacon
  • Kosmo's Q Maple Bourbon Rib Glaze
  • (optional) Berries and whipped cream

The Prep

Now you can execute this recipe on either a griddle or on a pan. Either way, we suggest you do it on your grill, right as your main cook is also reaching completion.

But let's not get ahead of ourselves. Step one, the pancake batter. Grab a large enough bowl, and add the ground oats, eggs, ripe banana, maple syrup, almond milk, baking powder and salt. Mix and mash everything together until smooth.

Pro tip: the riper the banana, the easier mixing the batter will be.

The Cook

Once you've got your maple syrup batter ready, it's time to make some pancakes! Pour some on a hot griddle or pan - adjust how much you pour for different pancake sizes.

When bubbles start to appear on one side, flip the pancakes. Then cook the other side to the perfect pancake color (you know the one!), and set aside. Repeat until you run out of batter.

Finally, the bacon. You could, in theory, do this alongside the pancakes, but having it ready beforehand will be a lot easier. 

Smoke at 300ºF (149ºC) until slightly crispy, then glaze with the Maple Bourbon rib glaze and cook to your desired finish.

The Payoff

It's the end of a day of BBQ, after a great meal, and you deserve a treat. Garnish your pancakes with glazed bacon, berries, whip, or anything else your heart desires!
