Sweet Honey Pecan Roasted Candied Pecans

Do you enjoy sweet and salty snacks? These roasted candied pecans are the perfect holiday treat, enjoyed on their own or as an ingredient in salads, dishes, and desserts.

You Will Need

  • 4 cups raw pecans
  • 2 tsp ground cinnamon
  • 12 Tbsp brown sugar
  • 2 Tbsp Kosmo's Q Sweet Honey Pecan
  • 1 tsp coarse salt
  • 1 tsp vanilla extract
  • 3 Tbsp water  

The Prep

Step one is roasting the raw pecans. Preheat your oven or grill to 300ºF (150ºC). While that's going on, move the pecans into a large bowl. Drizzle on the melted butter, and toss to fully coat.

Next, line a baking sheet with parchment or wax paper to avoid sticking, and lay the pecans out flat on it. Sprinkle on with Sweet Honey Pecan, or your favorite rub, to taste.

The Cook

Once the cooker is up to temp and the pecans are on the baking sheet, place them on the heat. Roast for about 8 minutes. Keep in mind, doing this on a grill/smoker helps give them some color & brings out the oils in the pecans for added flavor.

While that's going on, add the rest of the ingredients to a skillet, and place that on medium heat. Keep stirring and mixing (so it doesn't burn!) until the brown sugar melts, and you get the consistency of a candy slurry. 

When the pecans are done roasting, get them off the heat and add them to the skillet. Mix and fold throughout to ensure they are all nice and coated. As it mixes and warms up, it will thicken up and the pecans will become shiny. Your mouth should already be watering, as the aroma is great! Mix consistently for about 6 minutes. Again, if the pecans start moving, the sugar will burn.

The Payoff

As the candied pecans get closer to being done, get them off the heat. Spread them over a parchment- or wax paper lined baking sheet and let them cool down. Ιf any of the candied pecans have stuck together, just break apart by hand.

Optionally, you can sprinkle on a little more of the Sweet Honey Pecan seasoning over it for a little extra kick.
