When you want to impress at the family get-together, this smoked tri-tip with bacon broccoletti on the side has got you covered!
When we sent out the Mystery Boxes, we asked our people to send us recipes using their new Best Rubs. This submission was from Tim Crawford.
When preparing the tri-tip for smoke, make sure to remove any excess fat, silverskin, and loose flaps of meat that will burn during the cook.
Next, season it with your favorite spice combo. One coat of Prime Steak followed by a second pass with Classic Steak rub will do the trick!
Finally, set up your cooker for two zone cooking - one side above the heat source, while the other benefits from radiant heat, you know the drill. Let it come up to 200-225ºF (93-107ºC) , then throw the tri-tip on there!
Let the tri-tip cook on indirect heat for about 45 minutes, or until it reaches an internal temp of 105ºF / 40.5ºC.
At the same time, toss the veggies (sliced bell peppers, broccoletti) in some garlic olive oil. Season with Beer Can Chicken rub, and let them soften just a little bit. You can do this on the cooker using a cast iron over direct heat, or on your stove top.
Once the tri-tip is ready, pull it off, and let it rest while you crank up your cooking temperature to 400ºF / 204ºC.
While the temp is rising, assemble the boccoletti: wrap some veggies in a strip of bacon and secure with a toothpick. Cook till the bacon is done- times will depend on your gear, as well as how crispy you like your bacon!
When you reach 400ºF, throw the tri-tip back on the cooker, over direct heat this time. Sear for approximately 5 minutes per side, or until core temp reaches 127ºF / 53ºC.
Your smoked tri-tip and bacon wrapped broccoletti are ready! Let the steak rest for 10 minutes, while you enjoy the delicious appetizers!
