Bacon Jalapeno Burger Sliders

Served as either the main course or as hors d'oeuvres, Bacon Jalapeno Sliders are a guaranteed home run! Don't be scared to make bigger batches, either for yourself or to feed an army on game night.

 

You Will Need

  • Cutting board
  • Basting brush

The Prep

Let's get started! Set up your Traeger and flat top grill, and let them come up to temp. While that's going on, prepare your ingredients. Finely dice the onion and jalapeno peppers, and save in a bowl. Next, place the ground beef in a different bowl. Season liberally with both Garlic Jalapeno and Sizzlin' Burger rubs.

Finally, slice all of the sliders in two, and melt the butter.

The Cook

Once the flat top is hot enough, heat a drizzle of olive oil. Cook the bacon to your desired crispiness, then set it aside. Next, add the onion, jalapenos, and ground beef to the flat top. Add more seasoning if you want, and cook until the veggies soften and the beef is browned. 

While the beef is cooking, slice the bacon, and brush both sides of the sliders with melted butter (sprinkle on some SPG for extra flavor!).

When everything is ready, place the bottom buns in a smoker-safe pan. Divide the beef-and-veggie mix evenly among the buns. Then top each with a slice of American cheese and bacon crumbles. Drizzle with some mustard, and place the top buns on top. 

By now the Traeger should be up to temp. Move the pan with the sliders to the smoker, and let them cook for 30 minutes.

The Payoff

Once the sliders are done, pull them off the heat and let them cool. In the meantime, grab a small bowl and mix some Buffalo HOT Wing Sauce with as much mayo as you want. Add water, one teaspoon at a time, until your spicy mayo reaches dripping consistency.

When everything is ready, serve the bacon jalapeno sliders alongside the spicy mayo dip, and enjoy.
