You Will Need

  • 2 lbs of peeled, deveined, uncooked large shrimp
  • 4 tbsp of butter
  • 4 cloves of garlic, minced
  • Kosmos Q Lab Cajun Seasoning to taste
  • Hoagie rolls
  • Shredded lettuce
  • Tomato, sliced

Ingredients for Creamy Cajun Sauce

  • 1 cup Duke's mayonnaise
  • 2/3 cup ketchup
  • 3 tablespoons horseradish sauce
  • 1 tablespoon lemon juice
  • 1 Tbsp Kosmos Q SPG rub

The Prep

Before we dive in, let's prepare all the ingredients and tools that will be used during the cook. Start by preheating your flat top grill - if you don't own one, a cast iron skillet over direct heat will do.

Next comes the Creamy Cajun Sauce. In a mixing bowl, combine Duke's mayonnaise, ketchup, horseradish sauce, and lemon juice. Season to taste with Kosmo's Q Lab Cajun Seasoning. Whisk everything together until smooth, then pop the sauce in the fridge to chill.

While the sauce chills, it's time to prepare the shrimp. Place it all in a large enough bowl, and generously cover with Kosmos Q Lab Cajun Seasoning, ensuring each shrimp is fully coated with the savory and spicy goodness.

The Cook

With the flat top grill ready for action, we can go ahead and melt the butter. Once done, add the seasoned shrimp and minced garlic to the hot surface. Watch the magic unfold as the shrimp sizzle and turn a vibrant pink color throughout. This process should take around 5 minutes, but keep a close eye on the shrimp to avoid overcooking.

While the shrimp are cooking, seize the opportunity to give your hoagie rolls  a quick toast. Butter the rolls, then place them on the flat top for that delightful crunch.

The Payoff

The moment has arrived - it's time to assemble our Shrimp Po' Boy masterpiece! Take the hoagie rolls, and spread a generous layer of the Creamy Cajun Sauce on each side. Top it with shredded lettuce and tomato slices (pro tip: season those tomato slices!). Finally, pile on a good amount of seasoned shrimp. 

Now, it's time to dig in and savor the goodness of this Shrimp Po' Boy. That creamy Cajun sauce is guaranteed to become your new favorite thing to go with any kind of fish or seafood.
