Competition Burnt Ends That Will Blow Minds!

You Will Need

The Prep

The key to a successful burnt ends recipe lies in the preparation. Begin by trimming the brisket - best done when the meat is fresh out of the fridge. Separate the brisket point from the flat, as the burnt ends will come from the point. Trim off as much excess fat as possible, leaving about a quarter inch of fat on the meat to keep it moist during the cooking process.

Next, choose between the Cow Cover or the brand-new Cow Cover 2.1 rub (currently available only to Kosmos Q Lab members. Generously coat the entire brisket point, ensuring it reaches every nook and cranny. Let the seasoned beef sit for a while to allow the meat to sweat through the rub.

The Cook

Prepare your smoker by preheating it to 300ºF (149ºC) and using pecan wood for smoke. Place the seasoned brisket point on the smoker and let it cook for approximately 3 hours until the bark sets.

Once the bark has developed, it's time to wrap the beef to preserve its moisture and continue the cooking process. You can use either butcher's paper or foil to wrap the brisket tightly, then place it back on the smoker.

Allow the brisket to cook for another 1-2 hours, until internal temperature reaches 204ºF (96ºC) or your desired tenderness. Then pull the brisket point off the cooker.

Now comes the exciting part - transforming the tender brisket point into irresistible burnt ends. Cube the brisket into 1-inch cubes and place them in a disposable foil pan. Sauce the cubes with Kosmo's Competition BBQ Sauce, and toss to coat. Cover the pan and place it back on the smoker for one final time.

The Payoff

Allow the burnt ends to cook for about 1 hour until they reach a level of tenderness that is pure bliss - think soft, succulent, and melt-in-your-mouth goodness.

Once ready, remove the pan from the smoker and let them rest for a minute or two to lock in the flavors. Finally, the moment you've been waiting for - it's time to indulge in these delectable bites of BBQ perfection.
