Cajun Shrimp Stuffed Mushrooms

The classics are always great, but why not add a little spice? These Cajun shrimp stuffed mushrooms are a great snack for any time of the year.

You Will Need

  • 12 White mushrooms (2 inch+ diameter)
  • 1/8 cup minced Jalapeno
  • 1/8 cup minced Red Bell Pepper
  • 1/8 cup - minced white onion
  • 1 tsp - garlic puree (or minced garlic)
  • 1/2 cup - light plain cream cheese (can be substituted with regular cream cheese)
  • 1/2 cup shredded Mozzarella cheese
  • 1 cup raw Shrimp - peeled, deveined, and diced
  • 1 tsp Kosmos Q Kickin' Cajun Wing Dust

The Prep

Let's get the prep work out of the way first. Rinse the mushrooms, and remove the stem from each cap. Then spoon out the mushroom gills, keeping the cap intact as much as possible.

For the stuffing mince the Jalapeños, Red Bell Pepper, and White Onion, as well as 1 teaspoon of garlic (alternatively, use garlic puree). Shred about 1/2 cup of mozzarella cheese, and finally dice about 1 cup of raw shrimp (deveined and peeled).

The Stuffing

Next you want to steam the mushroom caps for 5 minutes. They should shrink by approximately 1/3 of their original size. Once steamed, move them to a container you can put in the refrigerator.

Time to make the Cajun shrimp stuffing. Get a medium sized mixing bowl, and in it combine the jalapeno, red bell pepper, onion, garlic, cream cheese, mozzarella cheese, raw shrimp, and Kickin' Cajun wing dust. Mix thoroughly, until fully combined, but not until it all turns into mush.

The Cook

Once that's ready, get the mushroom caps out of the refrigerator. Spoon the mixture into each mushroom cap - you can round them out with a spoon to keep the structure intact through the cook.

Now prepare your grill for cooking at 350ºF (176ºC), and cook the mushrooms for approximately 20 minutes, or until the shrimp is cooked. There should be a light crust on the mushroom cap filling.

When done, simply plate the shrimp stuffed mushrooms and enjoy!
