The Prep

Start by cutting the onions into thick pieces and cubing the chicken if necessary. Assemble the skewers by threading the cubed chicken, juicy vine-ripe tomatoes, and large onion pieces until the skewer is full. Alternate for color and flavor balance. Drizzle olive oil generously over the kabobs. This will not only enhance their flavor, but also act as a binder for the seasonings to adhere to.

 

Meanwhile, fire up your cooker, letting it come up to temp for grilling the chicken kabobs.

The Cook

While the cooker is warming up, let's prepare the Basmati rice. Cook it to perfection in a rice cooker, following the instructions on the package.You're looking for a fluffy, aromatic side to the skewers.

The stage is set for the main act! Place the skewers on the preheated cooker and let them sizzle and sear. Allow them to cook for a total of 10 minutes, rotating it once or twice throughout to ensure the meat cooks evenly all the way through. Make sure to use a meat thermometer, and once the chicken reaches an internal temperature of 165°F (74°C), remove the kabobs from the cooker. Let them rest for 5 minutes, allowing the juices to redistribute.

It's time to assemble your meal! Plate the skewers atop the fluffy rice, garnishing with green onions for a fresh, colorful finish.
