Let's make sweet potatoes more fun for the Holidays - add some sugar, pecans, rib glaze, and boom! You've got the best drunken(ish) sweet potatoes you've ever had.
Thank you Eric Scheel of 43rd Parallel BBQ for sharing this family recipe with everyone!
Let's get started! Right off the bat, fire up your oven (or cooker) and preheat to 325ºF (163ºC).
Next, peel the sweet potatoes. Place the peeled sweet potatoes in a pan of water, and bring to a boil over medium-high heat. Boil for 35 minutes or until tender. Then drain the potatoes well, and let them cool slightly.
Once the potatoes have cooled down, place them in a large mixing bowl. Add the butter and beat on medium speed with your mixer. Now add sugar, salt, and Maple Bourbon rib glaze, and mix well.
You're halfway there - just a couple more steps left.
Get a 2-quart casserole dish (or disposable pan), and grease it with butter. Then spread half the sweet potato mixture in the pan, and sprinkle the sweet potatoes with half of the chopped nuts. Spread the remaining sweet potato mixture on top, then top with the remaining nuts.
Finally, place the casserole in the oven and bake at 325ºF (163ºC) until you see it bubbling in the center - around 35 minutes. When done, remove the pan from the oven and serve hot.
Thank you once again Eric Scheel of 43rd Parallel BBQ for the recipe! We're sure it's going to become a Holiday staple in many homes.
