Easy Elk Chili Recipe

You Will Need

  • 1 lb elk meat, ground fine
  • 3 Tbsp olive oil
  • 1 large yellow onion
  • Kosmos Q SPG rub
  • Kosmos Q Dirty Bird rub
  • 3 cloves garlic, chopped
  • 3/4 packet William's Chili seasoning
  • 1 can (10 oz) chili ready tomatoes
  • 1 can (10 oz) original Rotel diced tomatoes 
  • 1 can (10 oz) chili beans
  • 1 can (10 oz) tomato sauce
  • 1 jalapeño (+extra for garnish)
  • 3 green onions
  • Shredded cheddar cheese
  • Sour cream

The Prep

So, let's get right into it! not much is needed in the way of prep work. Just grab a large enough pan, and start heating up the olive oil. Dice up the white onion, and add it to the pan.

While you stir it around, season with SPG and Dirty Bird - this will flavor not only the onion, but the oil that everything else will cook in. Let the onion go for a minute before adding the garlic, chopped fine.

The Cook

And then, it's time for the game! Add the whole pound of ground elk, and break it up while sautéing in the olive oil. Cover it up for a couple of minutes to give it time to brown, then season with some more SPG and Dirty Bird. Finally, add the chili seasoning - feel free to use your own blend!

For the next step, we're going to add all of the canned ingredients - tomatoes, sauce, beans, the whole lot. Mix very well, then add one whole jalapeño. Close the lid, and let the chili simmer till it's done!

The Payoff

There's only one thing left to do: serve, garnish, and eat. We like our chili garnished with chopped green onions, some jalapeño slices, and grated cheddar cheese. Give the cheese just enough time to start melting, and you're golden.
