Easy Fried Bologna Sandwich

If you’re craving something simple yet satisfying, this thick and hearty fried bologna sandwich is for you. It’s a no-frills Oklahoma classic that delivers bold flavors, perfect for a quick and comforting meal.

You Will Need

The Prep

Start by prepping your bologna chub. If you’re using a whole chub, slice it into thick cuts about ¾ of an inch (2 cm) thick. This thickness is key to achieving that rich, smoky flavor and a substantial bite. While you could use pre-sliced bologna for convenience, it’s going to be thinner, which means less sandwich for you!

With the bologna slices ready, rub a generous layer of yellow mustard over each slice, to help the seasoning adhere properly to the bologna. Next, coat the slices with a layer of Dirty Bird HOT rub, followed by a second layer of the Secret Stash American Badass rub. The seasoning combo gives a spicy, robust kick to the bologna even before it is cooked..

The Cook

Preheat your flat top or griddle to medium-high heat (around 350°F / 175°C). Once it’s nice and hot, place your seasoned bologna slices on the griddle. Let them fry, and watch for that beautiful char. Flip the slices every minute or so to develop even color and texture on both sides. There’s no exact timing here—just keep an eye on the char and cook to your preferred level of crispiness.

When the bologna is nearly done, reduce the heat slightly to medium-low. Place a slice of American cheese on top of each bologna slice. To get that perfectly melted cheese, drizzle a bit of water around the bologna on the griddle, then cover it with a lid or metal bowl to trap the steam. The cheese should melt in under a minute, creating that gooey, irresistible layer.

The Payoff

Now, it’s time to get your Texas toast ready. Give the bread a quick toast on the griddle for a minute or two per side, just enough to create a slight crisp while keeping the inside soft. Once done, take the bread and bologna off the heat and get ready to assemble your sandwiches.
