Honey Jalapeno Chicken Thighs on the Weber

Let's make grilled chicken sandwiches, but better! These sweet and spicy Honey Jalapeno Chicken Thighs are grilled to perfection on the Weber, and will become a new favorite at your BBQs.

You Will Need

  • 8 boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 Tbsp olive oil
  • 2 Tbsp apple cider vinegar
  • 4 cloves garlic, minced
  • 1 Tbsp fresh ginger, grated
  • 2 Tbsp Honey Jalapeno Rub from Q Lab
  • Honey Jalapeno BBQ Sauce
  • For garnish: sesame seeds, chopped green onions
  • Regular-sized hamburger buns for sandwiches

The Prep

Start by creating the marinade. In a large bowl, combine the honey, soy sauce, olive oil, apple cider vinegar, minced garlic, grated ginger, and the Q Lab Honey Jalapeno Rub. Whisk these ingredients together until they are thoroughly blended, ensuring a smooth consistency.

Next, place your chicken thighs in a zip-top bag or a non-reactive container. Pour the marinade over the chicken, making sure each piece is well-coated. Seal or cover the container and let the chicken marinate in the refrigerator for at least 1 hour, though letting it sit overnight will yield the best flavor.

The Cook

Prepare your grill by lighting your charcoal in a chimney starter. Once the coals are fully ashed over, spread them out on one side of the grill to create zones for both direct and indirect cooking. Preheat the grill to medium-high heat, aiming for a temperature range of 375-400°F (190-204ºC).

Remove the chicken from the marinade, allowing the excess to drip off (but don't rinse!). Place the chicken thighs on the grill over direct heat and grill for about 5-7 minutes per side, or until they start to char slightly. Once both sides have a nice char, move the chicken thighs to the indirect heat side of the grill, close the lid, and continue cooking until the internal temperature reaches 165°F (74°C), usually another 5-10 minutes depending on the size of the thighs.

The Payoff

Once the chicken is cooked through, transfer the thighs to a platter and let them rest for a few minutes. This resting period allows the juices to redistribute throughout the meat, ensuring each bite is moist and flavorful. While the chicken rests, pour the Honey Jalapeno BBQ Sauce on top, using a basting brush to coat evenly.

For the final touch, sprinkle the chicken with sesame seeds and chopped green onions. Serve the thighs hot with your choice of sides, or on regular-sized hamburger buns to make delicious sandwiches. The combination of sweet honey, spicy jalapeno, and the smoky char from the grill will make these chicken thighs a standout dish at any gathering.
