Homemade Beef Chorizo Quesadillas

These homemade beef chorizo quesadillas are nuclear hot - don't let that dissuade you from making a lot of them! With a rich blend of spices and tender beef, this recipe will quickly become a family favorite.

You Will Need

  • 1 lb (450g) ground beef (80% lean meat to 20% fat ratio)
  • 3 dried ancho chilies
  • 2 dried guajillo chilies
  • SPG rub, to taste
  • Double Pepper Cow Cover Coarse rub, to taste
  • The Kosmos Q Lab Fajita rub, to taste
  • 3 cloves garlic, minced
  • 1/4 medium onion, finely chopped
  • 10-inch Tortillas
  • Oaxaca cheese

The Prep

Start by preparing the dried guajillo and ancho chilies. Remove the stems and seeds from the chilies, then toast them lightly in a dry pan over medium heat for a few minutes until they start to release their fragrance. Be careful not to burn them, as this can add a bitter taste. Once toasted, soak the chilies in boiling water for 20-30 minutes to rehydrate them, until they start to soften.

Once the chilies are softened, you can prepare the chili sauce. In a blender, combine ¼ of an onion, 3 minced garlic cloves, SPG rub, DPCCC rub, fajita rub, chili flakes, guajillo and ancho chilies, and ½ cup of water. Blend until the mixture is smooth and uniform.

Finally, grab a bowl and mix this chili sauce into the ground beef. Cover the bowl and place it in the fridge to marinate overnight. 

The Cook

When you’re ready to cook, preheat your flat top griddle or a skillet over medium heat. You can either form the chorizo into small patties or crumble it directly into the pan. Cook the beef, stirring occasionally, until it is fully cooked and slightly crispy on the edges, which should take about 10 to 15 minutes. If there's excess fat, you may drain it off, but some fat will add to the flavor and help keep the meat juicy.

Next, lay a 10-inch tortilla on the griddle. While its underside is being toasted, add a generous amount of the cooked beef chorizo and as much Oaxaca cheese as you like – the more, the better! Fold the tortilla over to create the quesadilla.

The Payoff

Let the cheese melt and the tortilla turn golden brown and crispy. This should only take a few minutes per side. Once done, remove from the heat and serve immediately!

Besides quesadillas, you can use your homemade beef chorizo in tacos, scrambled eggs, burritos, or any recipe that calls for chorizo. Top it off with either sour cream or your favorite (extra hot) hot sauce, and you've got yourself a winner!
