You gotta love butter swim biscuits - why not take it up a notch, with a spicy kick to the tried & proven recipe we all know and love... A recipe by Kaiden Blake of KB's Outdoor Kitchen, let's get started!
This is going to be a quick recipe. It's a good one to throw on the smoker or grill next to a longer cook, if the size of your cooker enables it. Either way, fire up the cooker or oven and preheat to 450ºF (230ºC).
While that's coming up to temp, grab a medium sized bowl and combine all of the dry ingredients in it (flour, baking powder, sugar, salt, and Garlic Jalapeño rub). Then add the buttermilk, and mix until fully combined into a moist dough.
Melt the butter in a microwave safe bowl, and pour it into a 8x8 inch or 9x9 inch deep baking dish. If you've never made butter swim biscuits before, here's how they got their name: You want to place the dough in the dish with the melted butter, and spread it out until it touches the sides. It's swimming in butter!
Once your grill/smoker is hot, cut the uncooked dough into nine pieces, and place the dish over indirect heat.
The butter swim biscuits will be ready after 20 to 25 minutes, or when the top turns golden brown. When done, pull the baking dish off the heat and let it rest for a few minutes.
