1 lb broccoli florets
8 oz cream cheese
1/2 cup mayonnaise
1/4 cup sour cream
1 cup heavy cream
1 tsp salt
2 tsp Better than Bouillon
4 cups of cooked chicken breast, shredded
2 cups of cheddar cheese, grated
Cooked rice (or cauliflower rice) for serving
Even with the long-ish ingredient list, this is one of the easier healthy smoked chicken dishes you can make. A little early organization makes everything come together smoothly.
Start by cooking your chicken breasts and shredding them once fully cooked. You can smoke, grill, or bake them ahead of time, depending on your setup. Measure out the remaining ingredients, grate the cheese, and prep your broccoli so everything is ready to go.
With the prep work done, preheat your grill or smoker to 350℉ (180℃). The rest of the recipe comes together while your cooker warms up.
Bring a large pot of water to a boil and add your broccoli florets. Cook for around three minutes, just until tender but still bright green. Drain and set aside.
In a medium pan over low heat, combine the cream cheese, mayo, sour cream, and heavy cream. Season this mix with Kosmo’s Q Clean Eating Southern Chicken Rub and Beer Can Chicken Rub before you add the bouillon. Heat gently until the cream cheese softens, whisking until your sauce is smooth and well-combined.
In a 9x13-inch (23x33 cm) baking dish or 3-quart oven-safe skillet, mix your shredded chicken with the cream sauce and steamed broccoli. Stir until everything is evenly coated. Top generously with grated cheddar cheese.
Place this dish on the smoker or grill at 350℉ and cook for 30 minutes, allowing the smoke to gently infuse the dish while the cheese melts and bubbles.
After 30 minutes, your keto-friendly smoked chicken divan will be hot, creamy, and ready to serve. Prefer a deeper cheese crust? Sprinkle on some extra cheddar and put it back in the smoker for an additional five minutes.
You can embrace tradition and serve your dish over cooked rice or opt for cauliflower rice to keep the low-carb, keto-friendly vibes going. Either way, you get a comforting, flavorful dish that feels indulgent without sacrificing those gains.
Once again, thanks to Mark Ashby of Grill Mark Co. for sharing this recipe. Show him some social media love and don’t forget to make this dish your own!
Absolutely. Smoked chicken can be very healthy when lean cuts are used, and the seasoning avoids excess sugar. Smoking adds flavor without needing breading or heavy sauces, making it a great option for clean eating and keto-friendly meals.
The key is layering flavor without relying on sugar or processed ingredients. Using balanced seasoning blends, gentle smoke, and quality fats like cream cheese or sour cream. These help keep chicken moist and flavorful while still supporting clean eating goals.
You can make chicken divan healthier by using lean chicken breast, limiting processed ingredients, and swapping traditional rice for cauliflower rice. Controlled portions of dairy and seasoning add richness without overpowering the nutritional balance of the dish.
Chicken itself is naturally keto-friendly, but preparation matters. Breading, sugary sauces, and carb-heavy sides can quickly change that. Recipes like this one keep carbs low while using fats and seasonings that align with many keto guidelines.
This recipe combines classic comfort food flavors with clean eating principles. The light smoke adds depth without overpowering the dish, while the creamy sauce delivers richness without relying on flour or high-carb thickeners.
Season early, cook gently, and don’t rush the process. Smoking at moderate temperatures helps retain moisture. Letting the chicken rest before shredding keeps it juicy. Using well-balanced rubs also makes a big difference without needing extra ingredients.
