Juicy on the inside, crusty on the outside - this sweet pork loin recipe is an inexpensive (yet delicious) main dish. A community recipe submitted by Eric Holtz (@ericholtz69) - thank you, Eric!
Step one in this grilled pork loin recipe is, as with any good recipe, is choosing your ingredients. High quality, locally sourced meat does not only reduce its carbon footprint, but some studies have suggested it might actually be better for your health.
Once you get home, it's time to actually prepare the pork loin. Since we're injecting it, you will want to do this 24 hours in advance. Clean and trim the pork loin, then prepare the Pork Injection + Moisture Magic according to the instructions on the package. Then, using your apparatus of choice, inject the pork loin with the blend. Make injections at a 45-degree angle, about 1 inch (2.5 cm) apart.
Now place the injected pork loin in a suitable container, and refrigerate for 24 hours or overnight. The injection will marinate the meat from the inside, both adding flavor and tenderizing it.
It's the day after, and you're finally ready to cook! Well, fire up your cooker right away! Preheat to 185ºF (85ºC) - while it's coming up to temp, go ahead and prepare the pork loin as well.
Bringing the pork loin out of the fridge, move it to a wire rack over a disposable pan, so any liquid that has not been absorbed can drain away. Pat it dry with a paper towel, and give the pork loin a generous coat with both Dirty Bird and Spicy Killer Bee Chipotle Honey. Now let it sweat through the rub while the smoker is heating up.
When temps are stable, move the seasoned pork loin on to the cooker. If possible, you want the loin to be parallel to the heat source, to avoid over- or undercooking one side. If your pit does not allow this, try to rotate a few times throughout the cook.
You're looking for a core temp of 130ºF (55ºC) for the first step of the cook. Once you reach that, crank up the temp to 350ºF (151ºC) on your cooker. Glaze the pork loin with that sweet Maple Bourbon sauce, and place it back on the cooker. Let it climb those last few degrees to an internal temp of 145ºF (163ºC), or your desired doneness.
And that's it! Once the sweet pork loin is ready, bring it inside, and let it rest for 15 minutes. Then, serve in your favorite manner and watch mouths salivate all round the table waiting for their slice.
