Nashville HOT Chicken Sandwich

You haven't had a chicken sandwich until you've tried a Nashville Hot Chicken sandwich! Have one for breakfast, then pack a couple for lunch - save the rest for dinner.

You will need:

    For the Spicy Mayo

      The Prep

      This cook is not what you would usually expect from a sandwich - and it’s gonna be SO worth it! Instead of a grill, bust out the deep fryer, preheating the peanut oil to 350ºF (177ºC). Depending on your gear, this may take a moment, so use that time to prep everything else.

      Add some flour to a shallow bowl, and season it with 2 Tbsp of SPG rub. Mix the two together - this will be the breading for the fried chicken. In a different bowl, crack the three eggs, and whisk to combine them.

      Time to bread the chicken breast filets. Place each one in the seasoned flour, then give it a quick egg wash, then dump it into the flour again. Shake off the excess flour and arrange the chicken on a wire rack.

      The Cook

      Once the oil in the deep fryer is hot & ready, dump the chicken in. Fry each chicken breast to an internal temperature of 165ºF (74ºC), which should take 7-8 minutes. Then bring the chicken out on the wire rack (with a tray underneath it, to catch the oil that drips off).

      Immediately after getting the chicken off the frier, season it with Nashville Hot chicken dust - this will allow it to stick to the breading.

      Optional: Bring out the dehydrated pork skins. These are a great way to have fresh pork rinds at any time, because they have a long shelf life. Throw as many as you want into the deep fryer, and watch as they expand and come up to the surface. They should be ready in a couple of minutes - bring them out and season them with the hot chicken dust.

      The Payoff

      Time to assemble your sandwiches! First, grab a small bowl, and in it combine the ingredients for the spicy mayo. Add as much of the wing dust as you like to adjust how spicy it is.

      Then grab two slices of Texas toast (give them a quick char if you like), and spread some spicy mayo on the bottom slice. Layer the sandwich with shredded lettuce, chunks of chicken filet, and thick cut pickle chips. Finally, spread more of the spicy mayo on the top slice.
