If you love a classic BLT and can’t resist tender, smoky pork belly, this recipe is for you. These Pork Belly BLT Bites combine sweet, smoky, and savory flavors in bite-sized perfection that’s perfect for any occasion.

You Will Need

The Prep

Start by preparing the pork belly. Slice it into 1-inch cubes—this ensures they’ll cook evenly and be perfectly bite-sized for your appetizers. Once your cubes are ready, mix equal parts of Kosmo's Q Honey Killer Bee rub and Dirty Bird rub in a small bowl. Generously coat each cube with the seasoning mix, ensuring all sides are covered for that flavor-packed bite.

Meanwhile, preheat your smoker to 250°F (120°C). While it's heating up, arrange the seasoned pork belly cubes on a grill rack, leaving space between each cube for the smoke to circulate. 

The Cook

Once the smoker is ready, transfer the rack with the pork belly cubes onto the smoker. Let them cook for 2 hours, giving them time to absorb all that smoky goodness. Check the smoker periodically to ensure it maintains a consistent temperature, and resist the urge to open the lid too often—if you're lookin', you aint cookin!

After 2 hours, carefully remove the pork cubes and place them in an aluminum pan. Add the melted butter, raw honey, and Competition BBQ sauce to the pan, stirring gently to coat each cube evenly. Cover the pan tightly with its lid or aluminum foil and return it to the smoker. Let the pork cook for an additional 30–40 minutes, allowing the glaze to set and create that sticky finish.

The Payoff

Once the pork belly bites are done, remove the pan from the smoker and let the cubes cool slightly. This not only makes them easier to handle but also ensures the glaze thickens into a perfect glossy coating. 

To assemble your Pork Belly BLT Bites, skewer a pork belly cube, a small piece of lettuce, and a cherry tomato. Repeat until you end up with a plate full of juicy, delicious snacks. Serve these irresistible bites, and watch them disappear in seconds.
