What's better than chicken wings? These HUGE turkey wings will be the talk of the neighborhood.
As you can imagine, a recipe with only 3 ingredients does not require much in the way of preparations. Grab your cutting board and knife, and the wings will be ready to go on the cooker before you can say "pterodactyl".
For the wings, there's no need for trimming of any sort - just cut off the wing tips, as well as the V-shaped piece of skin from between the wing joints. If you're doing this just with drumettes, you can skip this step alltogether.
Next, lay the wings on a sheet pan, and season liberally all around. As always, feel free to use the rub you enjoy most - we obviously love the one we made. Try to coat the wings evenly, especially if you go with a hot rub.
Now cover the pan with saran wrap, and refrigerate for at least 2 hours (but not longer than 12/overnight).
Set up your cooker for indirect cooking, and fire it up. Preheat to a medium-high heat, in the 375-400ºF (190-204ºC). Add a couple small chunks of fruit wood (like apple or cherry) for smoke 10 minutes before you're ready to cook.
Place the wings over indirect heat, and cook to an internal temperature of 185ºF (85ºC) in the thickest part of each wing. This will take approximately 1.5 to 2 hours.
When the wings are ready, bring them off the grill, and slather them liberally with sauce. Tent lightly with Honey Jalapeño BBQ sauce, and let them rest for 10 minutes.
Serve and enjoy!
