The Pitch

Get ready for a sizzling, cheesy sensation that's going to set your taste buds on fire! This Smoked Queso Flameado on the Weber is an absolute game-changer. 

You Will Need

The Prep

To kick things off, make sure your chorizo is thawed if it was frozen. Next, grab your grater and get that oaxaca cheese into fine shreds. Now, it's time to fire up the smoker and get your trusty cast iron skillet ready. This is where the magic is going to happen. 

The Cook

As the skillet warms on the smoker, introduce the chorizo to it. Let it sizzle, breaking it into pieces as it cooks. Give it a generous dusting of our Garlic Jalapeno rub for that extra kick.

Cover it up to lock in all those mouthwatering flavors and let it continue to cook. Once the chorizo reaches its peak deliciousness, spread it evenly across the bottom of the skillet. Save a bit for the final layer because, trust us, you'll want that extra punch of flavor!

Then, it's time to pile on the oaxaca cheese. Cover it up and let that cheese melt into a creamy, gooey heaven. If you notice the cheese starting to brown, just move the cast iron a tad further from the heat source.

When that cheese is perfectly molten, it's time to add that reserved chorizo, pressing it gently into the melty cheese. Cover it up again and let everything meld together.

The Payoff

When ready, remove the cast iron from the smoker and let it cool just a bit. We're almost there! Grab a tortilla, lay it over the top of the cheese mixture, and scoop up a generous portion. Fold it into a taco, take a glorious, cheese-draped bite, and savor the explosion of flavors.
