You Will Need

For the Creamy Garlic Butter Sauce

  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • Kosmos Q SPG rub, to taste

  • (Optional) 1/4 cup grated Parmesan cheese
  • (Optional) Fresh herbs like rosemary or thyme, finely chopped

The Prep

Before you get started, take a moment to prepare your ingredients. Mince the garlic and finely chop the fresh herbs - fresh, preferrably local ingredients will make a world of difference in your dish.

For the steak bites, cut your ribeye steaks into bite-sized cubes. Once ready, place the cubes in a mixing bowl, generously cover them with The Best Prime Steak Rub, and give them a good toss to ensure an even coating.

The Cook

Let the feast begin! In a cast-iron skillet, melt four tablespoons of Kerrygold butter. Add your seasoned steak bites to the skillet and cook them to your desired level of doneness. Once reached, remove the steaks from the skillet and let them rest in a half-pan tented with foil, while you prepare the pièce de résistance – the creamy garlic butter sauce.

In the same skillet used for the steak, melt another batch of butter over medium heat. Sauté the minced garlic until it fragrant, taking care not to let it brown. Then pour in the heavy cream, bringing the mixture to a gentle simmer. Add SPG and Double Pepper Cow Cover to taste. If you want to add an extra layer of richness, incorporate optional ingredients such as Parmesan cheese or finely chopped fresh herbs like rosemary or thyme.

The Payoff

Time for the grand finale! You want the creamy garlic butter sauce to simmer for 5-10 minutes, to the point where it has achieved your desired thickness. Remember to stir occasionally to prevent any sticking!

Taste and adjust the seasoning as needed. If the sauce is too thick, add a splash of cream or milk.

With the sauce ready, drizzle it warmly over the rested steak bites. Serve warm, and remember to have fun!
