Not all appetizers are created equal - these sausage jalapeño popper cups are BBQ royalty. A terrific idea by Kaiden Blake of KB's Outdoor Kitchen! Let's get into it.
Let's make ourselves some cupcakes... The kind with meat, cheese, and spicy peppers in them! But seriously, the cupcake pan will make this so much easier. It's definitely worth the buy, even if it's just for this recipe (spoilers: it won't).
Grease your cupcake pan with either spray butter or oil. You really don't want the popper cups to stick, or they'll fall apart when you get them out!
Now separate the sausage into 12 equal portions. Roll each one into a ball, and place them into the cupcake pan. Then press them into shape, either with your hands or with a shot glass for ease.
Cut the cream cheese into 12 parts, and place each into a sausage cup. Season with Cow Cover to your liking, and place 2-3 jalapeño slices on top. Finally, cover with your shredded cheese of choice.
You can optionally choose a topping (or toppings) at this point. Some that work great are bacon bits, green onion, or parmesan cheese. But feel free to get creative!
Place the tray on your smoker or in the oven that's been preheated to 350ºF (177ºC). It will take about 25 minutes for the sausage to be completely done, but make sure to rotate the tray a couple of times throughout to ensure even cooking.
Once the smoked popper cups come off the heat, serve immediately while they are still warm. Enjoy your spicy, cheesy appetizers!
