A quick & healthy grilled fish skewer snack to make those summer days great! If you've never tried swordfish skewers on the grill, you've been missing out.

Let's get cooking! Depending on where you sourced your swordfish fillets, you might need to do some extra cleaning up. But, if like us, you got some frozen ones, simply let them thaw in the fridge overnight, and you are good to go!
Now get your fillets out the package. Pat dry with a paper towel, before cutting them up into 1 inch wide cubes. The swordfish will shrink a bit while cooking, so adjust to your preference!
Next, grab a large enough bowl. Add to it the swordfish cubes and season with SPG and Lemon Twist rubs to taste. Add the lime juice and olive oil as well - this is going to be one healthy snack!
Place the swordfish (still in their marinade) in the fridge until you are ready to grill. When the time comes, go ahead and prepare your skewers!
If you're using bamboo skewers, make sure to soak them in water for at least 20 minutes prior to placing them on the grill. You can easily do this while the cooker is preheating.
When the grill is up to temp in the 350-375ºF (177-190ºC) range, get the marinated swordfish out of the marinade and the skewers from the water. Place 4-5 pieces of swordfish on each skewer, and place them on the cooker.
Grill each skewer for 2-3 minutes on each side, to an internal temperature of 145ºF (63ºC). Then pull off the grill, and let them rest for a couple of minutes.
