If you’re doing smoked pork belly burnt ends, you better do it right - doesn’t mean it can’t be easy too! Here’s the quick & easy way to smoke some finger-lickin’ delicious bacon cubes for you and the family (or just for you, not judging!)
Pork belly burnt ends, aka ”all the magic of bacon, but you can now take a proper bite out of it.” Here’s how I prepare a pork belly:
Let’s dive right in! First up, we’ve got to dice the belly up. The way I do this is by first cutting the belly into 2” long strips. Then I cut these strips into 2” by 2”. Don’t worry if they look too big- there’s a lot of fat in there that will render out during the cooking process.
Now that the pork cubes are ready, place them into a disposable roasting pan. Give them a light hit of Dirty Bird Hot rub, then move the cubes around to fully coat them. Then repeat with another coat of Dirty Bird Hot, and finally, give them a light coat of Killer Bee. This combo works so well, you just have to try it!
For the next step of this recipe, you’ll need your trusty ol’ smoker or a grill you can set up for indirect heat cooking. Fire it up, let it come to temp, and you’re already halfway there.
The best way to go about cooking smoked pork belly burnt ends is by placing them on removable grill grates, or a smoker-safe tray. This makes transporting them to-and-from the cooker a lot easier. If you don’t have one of those, make sure they won’t fall through your grill grates while cooking (keep in mind, they shrink).
Once the burnt ends are on the cooker, you don’t have to worry about too much. After about 1 hour, flip the burnt ends. Give them around 30 more minutes after that, and once you start seeing a very light char around the edges, pull them off the heat.
Now here comes the moment of truth, the part where you will take these humble chunks of meat and turn them into pork belly heaven: that’s right - we’re saucing them up.
Get a large enough disposable roasting pan, and put the smoked pork belly burnt ends in it. Choose your sauce wisely! We chose a sweet apple chipotle BBQ sauce (link in the ingredients list above), but you can use any sauce you know and love.
Give the burnt ends a nice toss in the sauce, enough to cover them completely. Then put the lid on your roasting pan, and back to the cooker they go!
They now need about 1 more hour, give or take, of steaming in the closed pan, and that’s it!
Rest the meat for 10 minutes before serving. Enjoy your smoked pork belly burnt ends - peace!
