Smoked Prosciutto Wrapped Brie

Who said cheesy is bad? These smoked proscuitto wrapped brie balls will make your tastebuds sing in your mouth - you just CAN'T have just one!

You Will Need

The Prep

As any snack and/or appetizer recipe should, this one will take little to no time to prep. It's therefore the perfect last minute addition to your BBQ session. Got some ribs or pork butt on the cooker? Throw a batch of these babies next to it, and thank us later!

The only thing you really need to do in preparation is preheat your smoker (or oven!) to 275ºF (135ºC) indirect. This means one side is away from the heat source, while the other is directly above it.

The Cook

Time to make some cheese balls! Divide the brie into portions - 6 to 8 for a regular wheel of Brie cheese. Then wrap each one in a slice of prosciutto, making sure to have the cheese completely encased. Finally, give the balls a hit of Honey Killer Bee rub.

You're good to go! Simply place the prosciutto wrapped brie on the cooker for 45-60 minutes (with something underneath to collect any cheese that escapes). 

While cheese is smoking, slice and toast the baguette. When ready, pull the cheese off the heat and let it sit for 5 minutes.

The Payoff

Everything is done, what's left is plating the cheese balls. Slice the cheese making sure to chop prosciutto into smaller pieces. Then add Brie and prosciutto to a slice of the toasted bread, and top with one slice of green apple. Enjoy!
