When we make steak fajitas, we go all out: this unlikely recipe is just that! Snack on some chips and guac while following this grilled fajita recipe, and thank us later...
Now what you would usually do as step one in a fajita recipe is marinate the steak. And you know us - we have a ton of recipes for that. But for this one, we went the quick route, and got some pre-marinated skirt steak (available at your local Costco or Sam's). Feel free to do what you like, but don't knock it until you've tried it!
Time to fire up the pit! While it's heating up to a medium-high temperature, get the beef out of its packaging, and you're good to go!
Let's get cooking! Throw the skirt steak on the grates above direct heat. Skirt steak is usually very thin, so this is going to go fast - you've got just enough time to slice 1-2 white onions, and let them caramelize in some butter on your kitchen top.
Once you've got a good color developing on the steaks, crank up the heat. Nothing beats a good char on your fajita meat! Give both sides as much of a sear as you like.
Once your fajita meat is ready, pull it off the heat, and let it rest for a couple of minutes before slicing and assembling. Add your salsa, guac, and shredded cheddar. Finally, give them a hit of The Best Garlic Jalapeno rub, and enjoy the easiest fajitas you've ever made!
