Sweet & Spicy Ribs

You Will Need

The Prep

Preparing delicious pork ribs requires some love and attention. Let's get started! First, set your smoker to a temperature of 225°F (107°C). You're aiming for a low-n-slow cook and some fall-off-the-bone tender ribs.

While the smoker heats up, take out your rack of pork ribs. Trim, clean, and remove the silverskin if necessary. Then season generously with both Killer Bee Chipotle Honey rub and Lowery's Seasoned Salt. This combo will add depth and savoriness to each bite. Let the ribs sweat through the rub at room temp for about 10 minutes.

The Cook

Once the pit is up to temp and the ribs are ready, place them right onto the grates. The slow cooking allows the meat to become tender while absorbing that delicious smoky aroma from the smoker.

Keep an eye on the ribs and cook them until the meat starts pulling back, and the bones start to show. This should be right around the 3 hour mark. Another indicator of doneness is the famous toothpick test: push a toothpick (or meat thermometer) into the meat between the bones: it should go in and out with no resistance.

When the ribs are just about done, grab a small oven- or microwave-safe bowl. In it, combine the butter, honey, brown sugar, and your favorite sauce. Heat the mixture up, and immediately use it to glaze the ribs.

The Payoff

After all the patience and effort, the only thing that's left to do is let the glaze set! With that done, bring your ribs inside. Let them rest for 15-20 minutes. Then slice and enjoy!
