Start by preparing your seasoning. In a mixing bowl or shallow baking dish, combine equal parts Kosmos Q SPG Rub and coarse black pepper. This blend will give your steaks an incredible flavor with just the right amount of kick.
Next, coat all sides of your ribeye steaks with the SPG and coarse black pepper mixture. Make sure to press the seasoning into the meat, ensuring an even coating. Allow the steaks to rest for 10 to 15 minutes. This rest period helps the seasoning penetrate the meat, enhancing the overall taste.
Preheat your cooker to a high temperature. You want your grill to be nice and hot to get that perfect sear on your steaks.
Once your grill is ready, place the steaks on the grates. Cook each side for 2-3 minutes. For that perfect medium-rare, aim for an internal temperature of about 130°F (54°C). Use a meat thermometer to check the internal temperature for accuracy.
After cooking, let the steaks rest for 5 to 10 minutes. This rest period allows the juices to redistribute throughout the meat, resulting in a moist and flavorful steak.
To finish, top each steak with a slice of Kerrygold butter. The butter will melt over the hot steak, adding a rich and creamy layer of flavor.
