The Burger That Will Break America! Jobe's Char-Burger with Cheese Tots

The ultimate burger experience, inspired by Jobe's Char-Burger with a side of Beer Cheese-smothered tater tots. Ask yourself, why did you ever settle for less?

You Will Need

  • ¼ cup Kerrygold butter
  • ¼ cup all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 8 oz sharp cheddar cheese, grated (about 2 shredded cups)
  • 8 oz Gruyere cheese, grated (about 1 shredded cup)
  • Jalapeno beer (room temperature)
  • Kosmos Q SPG Rub, to taste
  • Kosmos Q Dirty Bird HOT Rub, to taste

The Prep

First, let's get things in place - don't be lazy with your prep, it will make your life easier down the road. Start by grating your cheddar and gruyere cheeses for the beer cheese sauce—pro tip: pre-shredded just doesn't melt the same way. Chop up your jalapenos for that spicy garnish later on, and set those aside.

Once your ingredients are prepped, get your flattop heating up to a sizzling temperature (around 375°F / 190°C) so it's ready when you are. Don't forget to preheat your fryer to around 375°F / 190°C as well for those crispy tater tots.

For the beef, toss your ground 80/20 mix into a bowl and season generously with The Best Sizzlin' Burger Rub and Garlic Jalapeno Rub. Once the meat is well seasoned, form them into loosely packed meatballs. Set them aside and give your buns a quick swipe of butter to prepare them for toasting. 

The Cook

Let's make that beer cheese first! In a sauté pan, melt your butter over medium heat, then stir in the flour and your Kosmos Q rubs—SPG and Dirty Bird HOT—to create a roux. After about a minute of cooking the roux, slowly whisk in the milk and jalapeno beer, a little at a time, ensuring the sauce remains smooth with each addition. Once everything is combined, add the Dijon mustard and Worcestershire sauce, letting it simmer until thick and bubbly. Reduce the heat to low, stir in your grated cheeses, and melt everything into a creamy, decadent sauce.

Next up, smash those burgers! Place the seasoned meatballs onto the hot flat top and let them brown slightly before pressing them down with a spatula or burger weight. Give them a quick flip after a couple of minutes, and cook to your desired doneness. While the patties are sizzling, toss your buttered buns onto the flattop to toast up nice and golden.

Don't forget to fry your tater tots according to the package instructions until they reach the perfect crispy texture. Drain the tots on a paper towel or rack to let the excess oil drip away.

The Payoff

Once your burgers are done cooking, it's time to assemble your burgers. Lay a slice of Kraft cheese over each patty while it's still on the flattop, allowing it to melt perfectly over the beef. Then stack your burgers on top of the toasted buns, with your favorite toppings—whether it's pickles, condiments, or something else that hits the spot. 

Now, for the showstopper: the cheese tots. Pour that luscious beer cheese over your crispy tater tots, and top with the chopped jalapenos for a little extra kick. Serve everything up together - one bite of this combo, and you’ll understand why it's poised to break America.
