The Secret to Mouth-Watering Chicken Every Time!

A mouth-watering recipe for juicy, smoky chicken drumsticks marinated and finished with a sweet and spicy BBQ glaze.

You Will Need

The Prep

For this recipe, we're cooking the drumsticks with the skin on! If you're scared to leave the skin on, worry not: by the end of this cook, it's going to be your favorite part. But, as always, you know what you like best!

Place the chicken legs in the ziploc bag, and add distilled water until they are covered. Then add 1 cup of the chicken soak. Seal the bag and shake to mix in the soak. Place the bag in a contaner to avoid spillage, and place it in the refrigerator. Allow the chicken to soak for at least one hour, but for the best results, let it marinate for up to six hours. We left ours in there for 3 hours.

The Cook

When you're ready to cook, preheat your cooker to 325°F (163°C). While that's going on, remove the chicken from the bag and arrange them in a disposable roasting pan. Don't rinse off the chicken soak!

Time to add some flavor! Season the top side of the chicken legs with Kosmos Q The Best Beer Can Chicken rub and Dirty Bird HOT rub. Ct the butter into 1/4 inch pats, and stuff the pieces around the edges of the pan. Once the butter melts, it will steam and braise the fat beneath the skin of the chickens, making it bite-through and delicious.

The smoker should be up to temp by now. Cover the pan with foil, place it on the grates, and close the lid. Keep an eye on the temperature, ensuring the chicken cooks evenly throughout.

After exactly one hour, go back and remove the foil. Let the chicken legs cook for another hour uncovered. About 10 minutes shy of the 2 hour mark, use a basting brush to scoop some of the molten butter and fat and baste the tops of the chicken legs.

By now, you should already see the skin pulling back, meaning they're done. The only thing that's left is giving the chicken a sweet & spicy glaze!

The Payoff

For the final touch, dip each chicken leg in Kosmos Q Honey Jalapeno BBQ Sauce, or use a basting brush to generously coat the legs. Place the sauced chicken legs back on the cooker for about 10 minutes to set the sauce. This step caramelizes the sauce, adding a beautiful glaze and an extra layer of flavor that will make your chicken truly irresistible.

Once the sauce is set, remove the chicken from the cooker. Arrange the legs on a serving platter, and get ready to enjoy the fruits of your labor. The chicken will be succulent and full of smoky, spicy, and sweet flavors that are guaranteed to impress. Serve immediately and watch as this mouth-watering chicken becomes a new favorite in your household!
