If you're looking to impress at your next barbecue, these Killer Honey Jalapeno Baby Back Ribs are a surefire way to do it. Combining sweet, spicy, and smoky flavors, this recipe is as irresistible as it sounds!

You Will Need

The Prep

First things first, check if your baby back ribs have the membrane and silverskin still attached. If they do, you'll want to remove that for the best texture. Trimming off any hard fat is also a good idea.

Pro tip: if you get your ribs from Costco, they often come with the membrane already removed, saving you a step.

Next, let's give these baby back ribs some flavor! Mix your hot honey glaze by combining 2 cups of honey with 1 tablespoon of Kosmos Q Seven Pepper Wing Dust. This glaze will add a sweet and spicy kick to your ribs. Set the hot honey aside.

We're almost ready to cook. Generously rub all sides of the ribs with the Q Lab Secret Stash Honey Jalapeno rub and Killer Bee Honey rub, making sure to cover every side.

The Cook

It's time to get cooking. Preheat your smoker to 225°F (107°C). Once up to temp, place the ribs on the grate, bone side down, and close the lid. Smoke the ribs for about 60 minutes or until they reach a deep mahogany color. This initial smoke period allows the ribs to absorb the smoke and develop that rich flavor profile, as well as develop that tasty bark we all love.

Once the ribs have a nice color, remove them from the smoker and wrap each slab in aluminum foil. Before sealing the foil, pour a thick layer of your hot honey, some brown sugar, Parkay squeeze butter, and ⅛ cup of water into the foil package. This combination will create a sweet, buttery glaze that enhances the flavor and tenderness. Seal tightly (without tearing!), and return the wrapped ribs to the smoker. Continue cooking until the internal temperature reaches between 192°F (89°C) and 195°F (90.5°C), or until the meat is tender enough to pass the toothpick test.

The Payoff

When the ribs have reached the desired tenderness, remove them from the smoker and place them on a cutting board. Unwrap the foil and cover the meat side with a generous layer of Kosmos Q Honey Jalapeno BBQ Sauce and another drizzle of hot honey. Use a basting brush if necessary to ensure even coverage. Then place the ribs back on the grates for 5-10 minutes for the glaze to set.

When done, allow the ribs to rest for about 10 minutes at room temperature, giving the flavors a chance to meld together. Garnish with Kosmos Q Candied Jalapenos for an extra touch of sweetness and a bit of heat. Finally, slice the ribs, serve, and enjoy the fruits of your labor.
