Ultimate Sloppy Bison Sliders

These sloppy bison sliders can feed an army - with more protein, less fat, and all the flavor, there's a reason many call buffalo the best meat for burgers!

You Will Need

The Prep

Let's get this party started! With this recipe, we're aiming for a quick way to feed a lot of people, so keep that in mind as we go through the steps.

First up, let your oven preheat to 325ºF (163ºC). While it's coming up to temp, heat up some oil in a pan, and throw in the bison. Use a wooden spoon and keep breaking it up until browned. 

Drain the fat from the pan, and set the browned buffalo meat aside. Then cook the bacon in the same pan. When done, cut into small pieces.

The Cook

Time to make some sliders. Place the bottoms of the buns in a 10x10 pan (use a disposable roasting pan for easy cleanup). Add the bison meat, divided between the buns, as well as the bacon, thinly sliced white onion, and thinly sliced jalapeño.

Now season the sliders with some Cow Cover and Dirty Bird Hot. Of course, feel free to use any spice blend you enjoy! Finally, cover the sliders with grated gouda cheese to taste. The more the better!

The Payoff

Place the pan with the buffalo sliders in the oven. Let them cook for 15 minutes, to allow the cheese to melt into gooey heaven. When done, pull out of the oven, and separate the sandwiches with a spatula to serve up.
