You've got friends or family coming over, and you need a quick snack to keep them busy while the main is cooking - these bacon wrapped jalapeno poppers will do it! Sweet and spicy and creamy in all the right places, these are guaranteed to become a favorite!

This is another quick recipe, but with a couple of very specific steps along the way. Make sure to read through the directions carefully and it's going to be smooth sailing.
First up, prepare your ingredients. Measure out the cream cheese and bacon, finely chop the onion, and if you're cooking right away, fire up your smoker and let it come up to 250ºF (~120ºC).
While the cooker is heating up, let's stuff those jalapenos. Cut them in half lengthwise, and scoop out the seeds. Mix the cream cheese with the chopped onion in a bowl, and season with the Killer Bee Chipotle Honey rub (to taste). Mix well.
Next, using a spoon, scoop the cream cheese mix into the halved jalapenos. Then wrap each half with bacon - you might want to use a toothpick or two to secure it in place. Finally, dust the outside with some Killer Bee Honey - a less spicy rub on the outside will add some flavor contrast, as well as lull your guests into a false sense of security (*insert evil laughter*).
Finally, place the bacon wrapped jalapeno poppers on the preheated smoker. You'll know they are ready when the bacon has reached your desired crispness - we suggest about 2 hours at this low temp.
Bring the jalapeno poppers inside, remove any toothpicks, and serve! Enjoy watching your friends and/or family go ham on them!
