Baked Feta Pasta | TikTok Recipe Kosmos Style

This baked feta pasta recipe tastes exactly as good as it looks - AMAZING! Feel like a high-end chef by checking out this easy guide to making it at home.

You Will Need

  • 4 Chicken Thighs (boneless + skinless)
  • 3 sprigs of Fresh Thyme
  • 2 pints of Cherry Tomatoes
  • 1 Shallot (quartered)
  • 3 cloves of Garlic (smashed)
  • 1/2 cup + 1 Tbsp Olive Oil
  • 8 oz block of Feta Cheese (Greek if they have it)
  • 10 oz box Penne Pasta
  • Fresh Basil leaves (for garnish)
  • Kosmo's Q SPG rub
  • Kosmo's Q Beer Can Chicken rub

The Prep

Let's get started - first up, you want to prep your ingredients. Having everything ready will make your life a lot easier down the line when the heat is on. So quarter your shallot, smash that garlic, and measure out the liquid ingredients into separate measuring cups or bowls. Finally, trim the chicken thighs, if necessary.

Once everything is good to go, it's time to fire up your smoker. Preheat it to 400ºF (204ºC). In the meantime, rub the chicken thighs with a layer each of SPG and Beer Can Chicken rub. 

The Cook

Once the smoker reaches the desired cooking temp, place the chicken thighs on a rack and cook with the lid closed for ~5 minutes. Then flip the chicken thighs, and keep cooking to an internal temp of 165ºF (74ºC). When hit, remove the chicken from heat and set aside to cool down.

In a large cast iron skillet, combine tomatoes, shallot, garlic, and olive oil. Season with SPG and toss to combine. Place the block of feta into the center of your tomato mixture, and drizzle with 1 tablespoon oil. Scatter those thyme sprigs over the tomatoes.

Put the skillet in your smoker and cook for 40 to 45 minutes, until tomatoes are bursting and the feta is golden on top. Meanwhile, in a large pot of boiling salted water, cook pasta until al dente according to the directions on its packaging. Reserve ½ cup pasta water before draining.

The Payoff

At this point, everything should be coming together. While the pasta is cooking, shred the chicken thighs (make sure they've cooled down enough!). Bring the skillet off the heat, and add the cooked pasta, chicken, and splashes of reserved pasta water, stirring until well combined.

Once it starts looking good, garnish with basil, and serve while warm.
