Sausage & Veggie Bake

A quick, easy & cheesy sausage veggie bake that melts in your mouth! We tried this one, more than once, and it's as good as it looks. Cooking tasty food doesn't have to take all day, if you're short on time try this one out.

You Will Need

The Prep

Step one, as always, is prepping our ingredients. This is especially true if you intend this to be a quickie - having everything chopped, peeled, and measured out, will save you a lot of effort down the line.

So, cut the sausages in half along their length, then repeat so you end with four long quarters per sausage link. Then slice into little triangles. Follow the same steps for the zucchini and yellow squash. Also place the frozen Brussel sprouts in the microwave for 2 minutes, or let them defrost at room temperature.

The Cook

Now that all your ingredients are good to go, you can begin assembling the sausage and veggie bake. Add the sliced links, zucchini, yellow squash, and brussel sprouts to a large bowl, then add the olive oil. Mix and toss well to coat everything in olive oil.

Next, grab a half size foil pan, and coat it with nonstick cooking spray (or lightly oil it). Pour the contents of the bowl into the pan, making sure the different ingredients are distributed evenly.

Finally, top the sausage and veggies evenly with 2 cups of shredded cheese. Place it on a smoker (or in the oven) preheated to 350ºF (176ºC) for 25-30 minutes.

The Payoff

When everything has cooked and the cheese has melted into the dish, get it off the heat. Hit the top with a tiny bit of seasoning and serve while still warm for the best results!
