Cast Iron Pizza Recipe

Fire up the pit and make yourself a cast iron pizza, with all your favorite toppings, in just about 30 minutes start-to-finish (including clean up!).

You Will Need

  • 2 cans of Pillsbury Biscuits
  • 1 jar of your favorite Pizza Sauce
  • 1 lb of Shredded Mozzarella cheese
  • Pepperoni slices (and/or any toppings you like)
  • Kosmo's Q SPG rub
  • Butter (to grease the cast iron with)

The Prep

The goal is simple: to make the best possible pizza on the smoker, with the minimum amount of effort, in the least amount of time. This recipe ticks all the boxes, and the end result is stupid good! 

The only prep work you'll need to do, is set up your smoker for cooking indirect. Then fire it up, and preheat to 375ºF (191ºC), and stabilize the temperature in that range.

The Cook

Let's get cooking! Grab a cast iron pan - or more, if you're cooking a larger batch. Grease these in with butter. Use as much as your doctor will allow.

Next up, grab those Pillsbury Biscuit cans. Open them up, and lay out the biscuits in the pan to cover the bottom without the biscuits overlapping. Depending on the size of your pans, you might fit around 7 biscuits in each pan.

Now press the biscuits so they are stuck together - they are going to rise while cooking, and we want them to become one unified pizza.

Season the biscuits with SPG, or use your favorite spice blend - you know what you like! Then spread on a good amount of pizza sauce. Finally, spread the shredded mozzarella, and top with the pizza toppings of your choice.

The Payoff

Once everything is in place, the only thing that's left is to cook it on the smoker! Make sure the temperature is holding around 375ºF (191ºC), then place the pizza over indirect heat.

Close the lid, and let it cook for about 15 minutes. You'll know it's ready by checking the biscuit edges - make sure the cheese has melted as well.
