The Prep

Let's get started! This recipe is super simple - a great example of "less is more"! To prepare these delicious chops, start by rubbing a small amount of the apple chipotle sauce onto each pork chop. This will act as a binder, helping the rubs to adhere to the meat.

Once coated with the sauce, give them an even coating of honey killer bee rub, followed by a generous coating of the cherrywood smoked chipotle rub. Allow the chops to sit for a few minutes at room temperature to let the flavors meld together before moving on to the cooking process.

The Cook

Now it's time to fire up the smoker! Preheat the pit to 225°F (107°C) and prepare it for indirect cooking. Once the smoker is up to temperature, place the seasoned pork chops onto the grill grate and close the lid.

Let the chops smoke slowly, allowing the flavors to develop inside the meat. Keep an eye on the temperature and adjust the vents as needed to maintain a consistent heat level. Smoke the chops until they reach an internal temperature of 155°F (68°C) in the thickest part, ensuring they are fully cooked and tender.

The Payoff

It's time to enjoy the delicious fruits of your labor! After resting the cowboy pork chops for 2-3 minutes, serve alongside your favorite side dishes. Grilled vegetables or creamy mashed potatoes work well, but you do you.
