America’s BEST Burger: Au Cheval-inspired Cheeseburger

You Will Need

  • 2 lbs Ground Beef (80/20)
  • Double Pepper Cow Cover rub, to taste
  • 4 slices of American cheese
  • 4 brioche hamburger buns, lightly toasted
  • 4 large eggs
  • Butter for cooking
For the Dijonnaise:
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Clark Crew whole-grain mustard
  • 1 teaspoon white wine vinegar
  • Salt and Double Pepper Cow Cover to taste
For the Garnish:
  • Thinly sliced pickles
  • Thinly minced red onion
  • Chives
  • Crispy bacon, season with

The Prep

Before diving into the cooking process, let's get the ingredients and equipment ready. This will save you time and make your life a lot easier when you're elbows-deep in bacon grease!

Start by preheating a skillet or griddle over medium-high heat. Add a pat of butter to the skillet and swirl to coat, ensuring a non-stick surface for cooking. If you want bacon on your burger, cook it to your desired crispiness and season beforehand, then set it aside. 

The Cook

With your prep work complete, it's time to start cooking! Begin by preparing the Dijonnaise, mixing together mayonnaise, Dijon mustard, Clark Crew whole-grain mustard.and white wine vinegar. Season with Double Pepper Cow Cover to taste, and mix until smooth. Set it aside for later.

Next, shape your ground beef into into 6 oz patties, slightly wider than the hamburger buns to account for shrinkage during cooking. Generously season both sides of the patties with SPG rub before placing them on the hot skillet. Cook the patties for about 3-4 minutes on each side or until they reach your desired doneness. During the last minute of cooking, add a slice of American cheese to melt on top of each patty.

In a separate skillet, melt a little butter over medium heat. Crack the eggs into it, and cook them to your preferred level of doneness; sunny-side-up or over-easy eggs work best for this recipe. Once done, give the top and bottom buns a quick toast as well.

The Payoff

At this point everything should be ready - the only thing left to do is to assemble America's best burger!

Spread a generous amount of the prepared Dijonnaise on the bottom half of each toasted brioche bun. Place a perfectly cooked burger patty with melted cheese on top, followed by a cooked egg. Complete the burger by adding thinly sliced pickles, minced red onion, and crispy bacon if desired. Finally, crown your creation with the top half of the brioche bun.
