You Will Need

For Egg Salad Sandwich:

  • 6 large eggs
  • 1/4 cup KewPie mayonnaise
  • 1 tablespoon Clark Crew mustard
  • 1 tablespoon finely chopped fresh chives (optional)
  • 1 tablespoon finely chopped fresh parsley (optional)
  • Kosmos Q SPG rub
  • Kosmos Q Dirty Bird rub
  • 4 slices of sourdough bread
  • Butter, softened (for spreading on bread)
  • Lettuce leaves
  • Tomato slices
  • Dijon mustard, to taste (optional)

For Pimento Cheese Sandwich:

  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Pepper Jack cheese
  • 4 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup diced pimentos, drained
  • Kosmos Double Pepper Coarse Cow Cover rub
  • 4 slices of sourdough bread
  • Butter, softened (for spreading on bread)
  • Lettuce leaves
  • Tomato slices

The Prep

For the Egg Salad Sandwich, start by boiling the eggs until cooked through. After cooling, chop them finely and mix with mayonnaise, mustard, and spices. Toast the sourdough bread slices until golden brown.

For the Pimento Cheese Sandwich, grate the cheeses and mix with softened cream cheese, mayonnaise, diced pimentos, and spices. Toast the sourdough slices until crispy.

The Cook

Once the bread is toasted, spread the egg salad mixture generously on one side of the sourdough slices for the Egg Salad Sandwich. Add lettuce leaves and tomato slices if desired, then cover with the remaining slices of bread.

For the Pimento Cheese Sandwich, spread the prepared pimento cheese on one side of the sourdough slices, then layer with lettuce and tomato slices before covering with the remaining bread.

The Payoff

With the sandwiches assembled, cut them in half and serve immediately. Pair with your favorite sides like chips, pickles, or a refreshing salad for a complete meal that's sure to please.
