Cherry Smoked Lamb Chops

Get ready to indulge in a fast, easy, and incredibly delicious dinner with these cherry smoked lamb chops! A recipe courtesy of Timothy Martin (@smell_that_smoke_bbq_mke).

You Will Need

  • Lamb chops
  • Kosmo's Q The Best Classic Steak rub
  • Cherry wood pellets
  • Mashed potatoes
  • Garlic parmesan butter
  • Fresh chopped garlic
  • Green onion

The Prep

Let's get started! Step one, trim & clean the lamb - you might have asked your meat provider to do this for you. Continue by generously seasoning the lamb chops with the Classic Steak rub, ensuring that each chop is coated with flavor.

Once that's done, let the lamb sweat through the rub at room temperature. In the meantime, preheat your pellet smoker to 225°F (108°C) and add some cherry wood pellets for that mouth watering cherry infusion.

The Cook

Once the smoker is good to go, place the lamb chops over indirect heat. While they are smoking, let's go ahead and prepare a sizzling garlic parmesan butter bath.

Heat up a frying pan on the opposite side (direct heat) of the cooker, and add 2 tablespoons of garlic parmesan butter. Sprinkle in some fresh chopped garlic to intensify the aroma.

After approximately 15 minutes of smoking, carefully transfer the lamb chops to the sizzling garlic butter bath. Baste them generously with the flavorful butter, ensuring every chop gets coated. This step adds a layer of richness and depth to the lamb chops that makes all the difference in the final product.

It's time to ramp up the temperature. Increase the smoker's temperature to 350°F (177°C) for the finish . Keep a close eye on the internal temperature of the chops using a meat thermometer. Once they reach an internal temperature of 130°F (55°C), it's time to remove them from the heat.

The Payoff

Allow the lamb chops to rest for about 5 minutes, giving time for the juices to redistribute and the flavors to intensify.

During this time, prepare a bed of creamy mashed potatoes. Once rested, place the cherry smoked lamb chops over the mashed potatoes. The contrast between the smoky, tender meat and the velvety potatoes creates a sensational combination of flavors and textures. To finish it all off, sprinkle some fresh green onion over the top before serving!
