Before beginning, gather your ingredients and tools. Start by bringing a large pot of water to a boil. Add a sprinkle of SPG rub to infuse some flavor right from the start. Toss in your halved or quartered potatoes, and let them cook until they're fork-tender. Around 13 minutes usually does the trick.
While the potatoes boil away, let's tackle the bacon. Cook the bacon in a cast iron skillet until it's almost crispy, then place it on a paper towel-lined plate to drain. Then chop it into bacon bits of your preferred size. Make sure to reserve some bacon grease and give the skillet a quick wipe-down to get it ready for the star of the show - the potatoes.
With the potatoes now tender and the bacon ready to roll, it's time to bring everything together. Drain any excess water from the potatoes and transfer them to a mixing bowl (or back to the pot if it's convenient). Now, the fun part - pour in a good portion of your homemade Ranch dressing. Sprinkle about half of the shredded cheddar cheese and the cooked bacon bits into the bowl.
Give it all a hearty stir to mix the flavors evenly. If you're feeling the need for an extra punch, don't hesitate to add more dressing, or even some of the bacon grease (doctors, don't @ us). And of course, season with a touch more of that SPG rub for that irresistible taste.
Once everything is well-mixed, transfer your potato concoction into your cast iron skillet. Top it all off with another generous layer of shredded cheese, and finish with a final layer of crispy bacon pieces.
For the grand finale, fire up your smoker. Place your cast iron skillet in the smoker and let the heat turn that cheese into a bubbling, golden dream.
Once the cheese is melted to your satisfaction, it's time to take those potatoes out of the smoker and onto your plate. Serve as a side dish alongside some Apple Pie Baked Beans, and don't forget to sneak in a bite or two - cook's privilege.
