Rib candy, aka. glazed BBQ ribs, for when you wanna have the main dish and dessert at once. These are stupid good, and equally easy to make! Here's how we did it.
First up, trim and clean the ribs to your preference. Make sure to remove the silverskin from the bones side!
While your smoker is heating up, hit both sides of the rack with your favorite BBQ rub. We used Dirty Bird, but you can go with whatever you know you enjoy!
Now, we did this cook on the Pit Barrel, so the process was a lot more straightforward. But you can do this on any smoker. Just cook your ribs the way you normally would!
We smoked them at 275ºF / 135ºC for about 3-4 hours, until the meat started pulling back from the bones. Then we did the toothpick test: a toothpick (or thermometer probe) should be able to go in and out of the meat between the bones like it's butter.
After they are done, bring the ribs inside, and wrap in foil for 15-20 minutes.
For the last (and best) step, cut the ribs, and coat with as much rib glaze as your heart desires... You can't have too much!
