This hearty Cheese Tortellini Soup combines Italian sausage with cheese tortellini in an easy broth with tomatoes, onions, garlic, arugula, and Italian herbs and seasonings. Ready in only a few minutes, it's comfort food at its best!
Let's get this party started! Begin by removing the sausage from its casing, if necessary - unless you got yours skinless to begin with.
In a Dutch oven or stockpot, let a drizzle of olive oil come up to temp over medium heat. Add the Italian sausage and let it sizzle and brown, then toss in the finely chopped onions and minced garlic, letting them cook together until softened.
With the stage set, it's time to do some flavor magic. Pour in beef and chicken broth, followed by the fire-roasted tomatoes and tomato paste. Bring everything up to a boil, then reduce the heat and let the soup simmer simmer, letting the flavors meld together.
