5 Minute Brisket Chili on a Weber

Transform yesterday's brisket into today's feast with this 5-Minute Brisket Chili recipe! Breathe new life into leftovers for a quick, flavorful, and satisfying meal.

You Will Need

  • 1 lb leftover Brisket
  • 1 medium Yellow Onion
  • Olive oil
  • Garlic to taste
  • Kosmo’s Chili Seasoning
  • 2 Tbsp Kosmos Double Pepper COARSE Cow Cover 
  • 1 can diced tomatoes
  • 1 can Rotel
  • 1 can Tomato Sauce
  • 1 can Chili Beans
  • 1 jalapeño pepper with seeds
  • SPG (Salt, Pepper, Garlic) to taste
  • For garnish
    • Shredded cheese
    • Sour cream
    • Extra peppers
    • Green onions/chives

The Prep

This is gonna be a quick one, so pay attention! To kick things off, if you put your leftover brisket in the freezer, make sure to thaw it out and give it a good chop. While you're at it, chop up your yellow onion and slice the jalapeño in half lengthwise, and prep/measure out the rest of the ingredients.

Let's get this party started! Heat up your cast iron pot over medium-high heat on the Weber. Add a generous amount of olive oil to the pot. Toss in those chopped onions and sauté them until they become wonderfully translucent. Then, introduce your leftover brisket to the mix, generously seasoned with a combination of Kosmo’s Chili Seasoning and 2 tablespoons of Kosmos Double Pepper Cow Cover. Give it a good stir to let those flavors meld into each other. 

The Cook

Now that your brisket is happily mingling with the onions, it's time to turn what's already good into something truly great. Pour in a cup of water, add the canned tomatoes, tomato sauce, chili beans, and don't forget that jalapeño pepper with the seeds for an extra kick.

Let the flavors meld and simmer in the cast-iron pot on your Weber for approximately 30 minutes. As the scent of brisket chili fills the air, add some SPG rub to taste, giving your chili that perfect balance of flavors.

The moment has arrived! Bring your 5-Minute Brisket Chili inside, and let it cool down slightly. Then serve, garnished with shredded cheese, a dollop of sour cream, extra peppers, and a sprinkle of green onions or chives.
